Italian Chicken Vegetables servedIngredients

  • 2-3lbs. Georges Farmers Market chicken thighs
  • Seasoning
    • ½ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • ¼ teaspoon black pepper
    • 1 teaspoon salt
    • ¼ teaspoon ground nutmeg
  • Vegetables
    • 1 cup diced eggplant
    • 1 cup sliced mushrooms
    • 1 cup diced yellow squash
    • 1 cup diced zucchini
    • ¼ cup vegetable oil
    • To taste salt and pepper
    • 2 tablespoons Alfredo sauce

Instructions

  1. Preheat air-fryer at 350ºF.
  2. Season chicken with dry seasonings and place in an even layer on the bottom of the basket. Cook for 5 minutes.
  3. Toss the eggplant and mushrooms together in half the oil and season with salt and pepper. Scatter the vegetables on top of the chicken. Cook for 5 minutes. Repeat with squash and zucchini.
  4. Shake the air-fryer basket and finish cooking for an additional 5 minutes. Cook chicken to an internal temperature of 165ºF.
  5. Carefully remove the food from the basket. Stir sauce into vegetables.
  6. Serve the chicken with the vegetables and enjoy!

Island Pineapple Chicken Rice finishedIngredients

  • 2-3lbs. Georges Farmers Market chicken thighs
  • 1 tablespoon vegetable oil
  • 1 cup pineapple tidbits with juice
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ketchup
  • 2 teaspoons freshly grated ginger
  • 1 ½ teaspoons minced garlic
  • 2 teaspoons water
  • 1 teaspoon corn starch
  • 2 cups cooked white rice
  • Garnish sliced green onions

Instructions

  1. Heat oil in a skillet over medium high heat. Sear the chicken on both sides.
  2. While searing the chicken, combine the pineapple and juice, soy sauce, sugar, ketchup, ginger and garlic in a mixing bowl. Add into the skillet with the chicken. Cook for 15 minutes or until chicken is cooked to an internal temperature of 165ºF.
  3. Remove the chicken from the skillet and set aside. Combine the water and starch together and mix in with the sauce in the skillet until thickening begins, remove from heat. Return the chicken to the skillet and coat with the sauce.
  4. Serve over cooked rice, finish with green onions, and chow down!
